Strawberry Rhubarb Pie

Tonight I made a strawberry rhubarb pie. I went to the farmers market and picked up some rhubarb, which is in season right now. This pie smells so delicious! We are taking it to church tomorrow so I can't tell you how it tastes, though my guess is as good as it smells! Here is the recipe in case any of you want to try to put rhubarb on your menu.

You will need a double pie crust for this pie. (I use coconut oil instead of butter or shortening for mine and it turns out nice and flaky.)

1 quart strawberries, hulled and chopped into large pieces
3-4 big stalks of rhubarb, sliced into 1/2 inch pieces
3/4 cup sugar (I use organic rapadura from Costco)
3 TBSP of cornstarch or tapioca (I used tapioca this time)
1/2 tsp vanilla
1/3 cup flour
1TBSP butter

1. Prepare crusts and set aside

2. Add first 6 ingredients in large bowl and mix. Let stand for 30 min, stirring often.


3. Spoon mixture into pie crust. Cut up butter and sprinkle onto fruit. Preheat oven to 425.


4. Roll out the top crust and you can either lay it on top or choose to criss-cross it like I did.

5. Mix 1 egg and brush onto crust and sprinkle with sugar.

6. Bake for 50 min. till fruit is nice and bubbly. You will want to set it on a pan so it doesn't make a mess in your oven.
